soil level lowering on my unknown indoor plant????

I believe it is some sort of succulent. A roommate left it at my place years ago and it has multiplied and grown and the soil level is getting a lot lower.
I know it seems obvious to replant it but it is very fragile. the plant almost looks like a bunch of lily pads, various sizes, but without the water. The tops are very deep green and the undersides are a very pretty red color.
So I guess I have two questions: 1. Anyone know what type of plant this is? 2. How do I repot it? Or should I just add more soil?
