I have a bed of cilantro and I find that it "bolts" — developing a thick stem and feathery leaves — very quickly. This new growth produces the seeds and the more desirable leaves diminish. This year, I am experimenting with pinching off the new growth to see if I can extend the harvest season. Any thoughts?
